The Head of Sales will drive sales from local, regional, national and international markets across all segments, requiring both field- and hotel-based sales activities, and oversee the implementation of marketing campaigns.

 We are looking for a person with hotel sales management experience gained during extensive refurbishment and repositioning projects, who is intuitively ahead of the game for new business and who can grow existing accounts naturally by building genuine relationships with key market players.

 Driving strategy, delivering results and positioning St Michaels in the hotel and wellness markets will be just three of the key areas of focus for you. You will be passionate about the hotel industry and keep informed on local and global industry trends and best practices.

Client entertaining, hosting FAM trips and representing St Michaels at industry events is a key requirement of the role and as such, the ideal candidate will be working in a similar proactive sales role in a fast-paced hospitality environment.

Reporting to the Head of Sales & Marketing, you will have the support of a sales executive and the wider Sales & Marketing team.

ROLE OVERVIEW

St Michaels Resort completed a multimillion-pound redevelopment in 2018, which saw the opening of an additional 32 contemporary bedrooms, a state-of-the-art health club, a world-class spa, and two new restaurant concepts: Brasserie on the Bay and the Garden Kitchen.

You will be responsible for the day to day running of the kitchen under the direction, and in the absence, of the Head Chef, ensuring that company and statutory food, hygiene and Health & Safety standards are maintained at all times by chefs and porters. Ensure detailed Head ion of all dishes on the menu; reflecting the values, standards and ethos of the organisation. In the absence of the head chef you will be responsible for the leadership and management of the Junior Sous Chef to ensure appropriate management and delegation to the kitchen brigade.

DUTIES & RESPONSIBILITIES GENERAL

  • Comply with company policies, standards and legislative requirements relevant to maintaining effective performance, communication, training and good business reputation; including Food Hygiene, Fire, Health & Safety regulations, attending relevant training as required.
  • Represent St Michaels resort and our values in your general conduct and in your dealings with customers, trainees, partners, suppliers and other stakeholders, delivering on St Michaels core values.
  • To ensure that customers are given a prompt and efficient service and expectations are consistently exceeded.

 

KITCHEN

  • To plan, prepare and cook menu items as directed by the Sous / Head Chef.
  • When required to ensure all daily deliveries are properly checked, ensuring all have arrived and are correct in the morning and signing off invoices before the supplier has left.
  • To support the senior chefs and ensure all junior chefs are on duty at the correct time, noting and reporting any absence or lateness.
  • To work closely and efficiently with the Kitchen Porters to ensure the kitchen is kept clean and tidy at all times in line with hygiene and health and safety regulations.
  • To manage the rotation of stock in your section and ensure the fridge temperatures are checked on a daily basis, reporting and resolving any problems, removing foods which may have been spoilt due to storage at the incorrect temperature.
  • To ensure your section is ready for service and be responsible for a smooth and efficient service, maintaining communication with the senior chef.
  • To ensure at the end of the shift that your section and the kitchen is clean and tidy ready for the next shift.
  • To check in with the senior chef before leaving the shift, communicating any problems.

 

PEOPLE:

  • To be a team player, assisting other team members when necessary.
  • To treat members of the team as you would expect to be treated.
  • To demonstrate and instruct Commis Chefs in food preparation and cooking skills as directed by the Sous / Head Chef

 

PROFESSIONAL ATTRIBUTES, SKILLS & EXPERIENCE KITCHEN

  • Experience of working in well-established high quality restaurants– at supervisory level or above for a minimum of 2/3 years and would be confident to look after a team of at least 15 people.
  • A passion for excellence and learning, and a thorough knowledge of ingredients and how they should be used.
  • Sound knowledge of current food hygiene & safety regulations.
  • Previous experience and/or a qualification in training is desirable with a passion for learning and continually improving skills and knowledge.

 

FINANCE & BUSINESS

  • Sound knowledge of current food hygiene and safety regulations.
  • Experience of managing budgets and minimising costs within the department.
  • Experience of using, analysing and acting on management information to drive business/change and improvements.
  • Proven ability to work at strategic level.
  • Ability to identify risks and manage potential situations to minimise the impact on customer experience and cost to business.

 

HR & PEOPLE DEVELOPMENT

  • A natural motivator and have outstanding interpersonal & communication skills. Plenty of initiative and ability to respond to the ever changing environment/circumstances.

EDUCATION & TRAINING

  • NVQ Professional cookery – between Level 1-5
  • CIEH Food hygiene/safety & H&S between Levels 1-4,

Now is an exciting time to join St Michael's. We are currently recruiting a Health Club Day Cleaner to join our team.

Job Role/Requirements:

Working primarily on your own you will be a part of the Health Club team and will be expected to deliver exceptional standards to ensure that the facility stays clean, tidy and inviting for our guests. Assisting the Maintenance team by identifying anything that requires repairing and ensuring that it is followed through to job completion . Ensuring you are compliant with all Health, Safety and Hygiene legislation, ensuring high levels of cleanliness are met at all times.

The role will require you to be fully flexible in your availability with both AM and PM shifts available.

Skills and Experience:

- You must have/be able to demonstrate success/experience in a similar role and preferably within a 4-5 star hotel.

- Be able to demonstrate a high standard of work and attention to detail.Have the ability to work alone or as part of a team.

The Role of a Spa Therapist:

£9 per hour starting rate of pay increases upon successfully completing product house training.
